One of my all-time guilty pleasures? That creamy, delicious pasta salad from the supermarket deli β€” especially during the holidays! I can never resist it alongside leftover ham or turkey at Christmas. So you can imagine my excitement when I discovered this easy, homemade copycat version!
It’s packed with tender pasta, crisp veggies, and that rich, creamy dressing we all love. The best part? It’s now a staple at our table β€” not just for the holidays, but for BBQs, potlucks, and entertaining all year long.

Ingredients
  

  • 250 g pasta uncooked
  • 1 carrot grated medium
  • 1 celery stick chopped
  • 1 spring onion finely chopped green parts only
  • 1/2 red capsicum diced
  • 2/3 cup tasty cheese grated
  • 1/3 cup parsley finely chopped
  • 300 ml Praise coleslaw dressing
  • 3 tbs sour cream heaped

Instructions
 

  • Step 1
  • Cook pasta in boiling, salted water, then drain and chill.
  • Step 2
  • In a small bowl, combine the coleslaw dressing and sour cream.

  • Combine pasta, vegetables, cheese and coleslaw dressing mixture.

  • Season. Chill before serving.

This pasta salad, along with a simple green one, is a must at any of my barbecues. I love to serve it with chicken wings, lamb chops and some prawn skewers.
